Vegan Matcha Waffle
Who likes Matcha? I made these Matcha waffles yesterday with @heapwellsuperfoods Matcha powder and I had a crowd of children around the whole time I was photographing them asking if they could eat them yet! When I gave the go ahead they didn't last long at all, and then I had to go on to make two more batches as they kept wanting more! So if you have kids about you may want to double the recipe!
Makes about 14 small or 6 full size.
- 1 cup almond milk
- 1 tsp apple cider vinegar
- 1 tbsp agave
- 1 cup flour
- 1 tbsp cornflour
- 1.5 tsp baking powder
- 1 tsp Matcha powder @heapwellsuperfoods
- Pinch of salt
Whisk the wet ingredients together, then add the dry one and whisk with a balloon whisk until the batter is smooth. Cook according to your waffle maker's instructions. I served mine with chocolate and icing sugar and lime juice. If you want a much stronger Matcha taste then add a little more Matcha powder or sprinkle some on top!
